Vinification

The grapes are crushed and then placed in the traditional clay vat (Qvevri) where the must undergoes a slow fermentation in the cold until the first warmth of spring, i.e. April of the following year. After that, the wine is racked and the must is pressed. Then, the wine is put in 400l barrels for maturing.

Vineyard

The wine “Mtsvivani -Kakhuri Qvevri” is produced from Kindzmarauli’s own vineyards, located in specific areas, where traditionally the high quality of the wine is caused by a concentration of black shale and alluvial carbonate, as well as by the positive effect of the Caucasus. The ridge and the places where all the conditions are met to reach the highest degree of ripeness of the grape, which is so important for the preparation of traditional Kakhetian wines of high quality.
