The grapes are subjected to de-stemming, crushing, then the recovery of the juice, separation of the liquid part and the pomace formed from the solid parts. The wine is produced from this liquid which represents less than 55% of the whole must. It is after the treatment and the cleaning of the must that the alcoholic fermentation takes place strictly controlled under a temperature of 16 to 18°C. When the sugar content of the fermented wine reaches 18 grams per liter, the fermented mass is quickly cooled to zero degrees, thus stopping the alcoholic fermentation. Before bottling, this wine is kept at the indicated temperature.


The rich soils of Kindzmarauli’s private vineyards located on the edge of the Great Caucasus mountain range traditionally produce high quality grapes used to produce this wine in Kvareli.
