Vinification
Classic fermentation with conservation of the must for 5 weeks, then a rest period, followed by malolactic fermentation and aging in Caucasian oak barrels for a period varying from 9 months to 1 year, then the wine is bottled without any treatment or filtration.
This wine can be enjoyed immediately, as well as benefiting from long term aging. 2013 is one of the best vintages and its quality and price are only going to improve year after year.
Vineyard
This wine is produced from the best grapes from the oldest vines in the specific area of Kvareli. surrounded by the forests of the Caucasus in the north and by the Alazani valley in the south. It is a high quality wine due to the soil and microclimate. The best vineyards belong to the Kindzmarauli company and have been producing high quality wines for centuries. In order for the wine to reach such an objective, it is necessary that the rules of harvesting are applied from the initial stage of picking. During the cutting process, all the damaged bunches are removed, and finally the still green grapes are removed so that only one bunch per strand remains. Although this process reduces the harvest by half, it significantly improves the quality of the wine produced. After this operation, no more than one bottle of the best wine can be obtained from each vine.
